If you’re interested in improving gut and joint health, then you should be eating gelatin. Athletes, you should be eating it for recovery, although this shouldn’t be your post-workout recovery protein. It also can help with skin, hair, and nails. Gelatin is part of an ancestral diet – a protein derived from collagen. It is one reason for the benefits of bone broth.
Usually when I post a recipe, it’s something I’ve just made up and written down. However, this is NOT the case with these gelatin gummies. I tried about five different recipes before finally finding what works and developing my own. Hint: most recipes include pureed fruit and that didn’t work for me.
This is also the first batch I made that my kids liked. If you have kids, then you know that finding a healthy food they will eat is always a bonus!
Apple Gelatin Gummies
- 1/4 cup organic 100% apple juice
- 1 Tablespoon lemon juice
- 2 Tablespoons local, pure honey
- 2 Tablespoons grass-fed beef gelatin (link below)
- One 50-item gelatin mold, OR a silicon sheet (link below) may also use a sheet of parchment or wax paper
Instructions:
Place mold, silicon sheet, or paper on a hard surface that will fit in your fridge, such as a roasting pan or cookie sheet. Combine juices and honey in a small saucepan. Heat on low, stirring constantly with a whisk. Once hot (steam is visible), VERY gradually sprinkle in the gelatin, while constantly whisking to incorporate and break up lumps. Do not let the mixture boil. Once all gelatin is incorporated, carefully, SLOWLY pour into mold. Pro tip: pour as slowly as you can, and stop pouring when mold is only 1/2 full. Place in refrigerator to harden. Once cool, store in airtight container.
No mold? Or sounds too tedious? No problem. Instead of using mold, pour small blobs of mixture onto a silicon sheet or parchment paper to make gelatin ‘pancakes’. Place in refrigerator to harden. Once cool, store in airtight container.
